Paul Schultz, president and COO of San Diego-based Jack in the Box, will retire in January. ... In Los Angeles, Tony Esnault is Patina's new executive chef. At the University of Southern California, Kris Klinger has stepped in as the director of hospitality. ... Robert Nichols is the new food and beverage director at Le Merigot, a JW Marriott property in Santa Monica, Calif. ... In San Francisco, Chris Kronner, formerly of Serpentine, now heads the kitchen at Bar Tartine. Jonnatan Leiva, formerly of now-shuttered Jack Falstaff, headed east to 10 Downing in New York City. ... In New York, Fabio Trabocchi is the new executive chef at the Four Seasons. Marco Canora has left Insieme to pursue plans to open a second Terroir location. James Donahue is now executive chef of the Fitzpatrick Hotel Group's restaurants The Fitz and The Wheeltapper. ... In Chicago, Shawn McClain has stepped down as executive chef at Custom House; Aaron Deal, formerly of Tristan in Charleston, S.C., is filling his spot. Patrick Fahy replaces Tim Dahl as pastry chef at Blackbird. Dahl's wife, Elizabeth Dahl, has left the pastry chef spot at Boka; Kate Neumann, formerly of Alinea, takes her position.
