Code Green: A Hospital Charges for To-Go Containers

Cafeteria patrons at Boulder Community Foothills Hospital in Boulder, Colo., can opt to grab their food and go—but the choice will cost them. In support of the hospital’s commitment to earth-friendly operations, the cafeteria charges customers 20 to 35 cents to carry out items in biodegradable beverage cups and clamshell containers. Dine-in guests eat on china tableware.
“We’ve tried to build a culture here in which sustainability is a part of how we do business,” says Kai Abelkis, sustainability coordinator at the facility (an Aramark account), the first LEED-certified hospital in the country. In the kitchen, all food waste goes into dedicated bins for composting; restrooms also have collection bins for paper towels, which are compostable. “We’re trying to become a zero-waste kitchen, ultimately,” Abelkis says.

I think it is a great idea. We, as a society, are slowly coming to the realization that our waste does not just "go away" and the true cost of a styrofoam cup is not what the vendor paid for it but includes the impact on the environment. Thumbs up for the effort to move in a positive direction.

This would be a good idea if it were a restaurant not in a hospital. Many patrons at hospital food service facilities are friends and family of patients in the facility. They many times are breaking away from their sick family to grab food to go and get back to their family member.
When was the last time you heard of someone coming in from outside to get food to go from a hospital cafeteria and take it home because it was so good? What about the last time your neighbor that is an employee at the hospital decided to grab something to go from the cafeteria in the evening or after shift to feed the family.
This is a ridiculous thing for a hospital cafeteria to do. Penalize folks for coming to the hospital cafeteria in order to get a meal and get back to the family where they can eat in their room and be with family at the same time.
I bet Moe's Bagels around the corner from the main hospital and neighboring restaurants start doing better. Hospitals are not know for their great food. Why would I pay a premium when I can get to go around the corner about as quick. If I was a competitor I would advertise and do delivery to the main lobby of the hospital for free.
