Union Square Hospitality to Open Union Square Tokyo

By Staff, The Editors -- Restaurants & Institutions, 12/4/2006

Union Square CafeNew York City-based multiconcept operator Union Square Hospitality Group (USHG) has completed a business licensing agreement with Wondertable, a Japanese company, to create and open Union Square Tokyo.  Under the agreement, Wondertable will own the restaurant, while USHG will provide the trademarked name, expertise, and know-how to create UST, as well as on-going consultation and promotion following its opening.

Michael RomanoScheduled to open in spring 2007, Union Square Tokyo will be a modern fine-dining restaurant inspired in part by Union Square Cafe. The restaurant's menu, created and directed by Union Square Cafe's Executive Chef-partner Michael Romano (l.), will feature dishes familiar to guests of Union Square Cafe, paired with new recipes based on local market availability in Tokyo.

UST will be located on the ground floor of Tokyo Midtown, a multi-use building project currently under construction. The restaurant, designed by architect Junpei Yamagiwa and USHG Partner David Swinghamer, will have a modern, warm ambience with floor-to-ceiling windows and an outdoor patio overlooking a landscaped park.
