When Rice University's (Ivy '81) housing and dining department was tasked with improving concessions for its smaller outdoor sporting events, they found a golf-cart-customizing company specializing in foodservice and had one built. Veronica Boorum, administrative program manager at the Houston campus, says the move provided another opportunity. “Once we had set everything up [for the venues], we realized the cart would sit idle for long periods of time, and so the Owl-la-Carte program was born,” Boorum says. The Owl-la-Carte now serves breakfast and lunch items such as breakfast tacos, cinnamon rolls, kolachke-style pigs in a blanket, subs and hot dogs on weekdays at various points around campus. “The program is in its infancy, but we are very proud of it,” she says, “and we look forward to making it a regular option for the on-the-go crowd here.”
