Growth of the chain-restaurant business continued to slow last year. R&I’s 44th Annual Top 400 Chains ranking finds that the largest multi-unit brands had aggregate sales of $292.1 billion in 2007, a 5.4% increase over last year’s total.
This year’s increase compares with 6.8% year-over-year growth for last year’s Top 400 (2006 sales) and a 9.3% sales increase the previous year.
Unit growth also has slowed. This year’s Top 400 Chains operated roughly 274,000 locations at the end of 2007, compared with the 269,000 units for the 400 chains in last year’s ranking. This year’s 1.9% increase is about half the 3.9% increase in global locations posted the previous year.
The 10 largest chains continue to outpace the total-industry performance. The Top 10 had combined sales last year of $151.1 billion, 9.1% better than the previous year and accounting for 51.7% of total Top 400 sales (up from 50% in 2007).
Here, the Top 400 are segmented by core-menu type. These are each menu segment’s shares of total sales and units:
- Asian (both full and limited service): 1% of total sales; 0.7% of total units.
- Buffet/cafeteria: 1.8% of total sales; 0.8% of total units.
- Burgers: 35% of total sales; 23% of total units.
- Casual dining: 9.3% of total sales; 3.6% of total units.
- Chicken: 8.1% of total sales; 8.8% of total units.
- Coffee/tea/doughnuts: 6.8% of total sales; 9.4% of total units.
- C-stores: 1.3% of total sales; 3.6% of total units.
- Family dining: 5.1% of total sales; 3.8% of total units.
- Ice cream/juice/treats: 2.5% of total sales; 8.3% of total units.
- Italian: 2.4% of sales; 0.9% of total units.
- Mexican (both full and limited service): 4.2% of total sales; 4% of total units.
- Pizza: 8.3% of total sales; 13.4% of total units.
- Sandwich/bakery-cafe: 8.6% of total sales; 17.3% of total units.
- Seafood: 2.1% of total sales; 1.1% of total units.
- Steak/barbecue: 3.6% of total sales; 1.4% of total units.
