Philadelphia-based Aramark Healthcare faced two challenges in summerizing its menus: deliver options that would encourage customers to eat more healthfully, and find ways to corral escalating food costs.
A focus on fresh produce supplied the solution. Colors of Summer, a season-long campaign for retail and patient-care operations, highlights seasonal—and, as possible, locally or regionally sourced—fruits and vegetables. Recipes include grilled chicken with fresh sautéed peaches and roasted pork with fresh vegetables and herbs.
“We've seen some significant increase in product costs,” says Paul Gizara, vice president of product development for Aramark Healthcare, Food Service. “The idea of doing a promotion with seasonal local produce seemed very smart … [Produce is] relatively inexpensive compared with what's happening to other commodity prices.”
