R&I's Top 100 Independent Restaurants: Beyond the Big Apple
Eighty-seven of the concepts on R&I's Top 100 list are located in major cities; more than half are in New York City or Las Vegas. But what about those beyond the bright lights of big cities?

Size has something to do with it. Many of the restaurants outside of big cities are literally giants, with a footprint of well over 25,000 total square feet and mazes of dining rooms for banquets, weddings and private events. “We can do anything, and we can change in a second,” says Deno Roumanidakis of
Bob Chinn’s, which has 750 dining room seats. “It’s one of the things that makes us who we are.”
Beyond that, not surprisingly, the answers are the same as from any top performer on the list: “It’s service and
it’s food—those are the two things,” says Roumanidakis. Van Eure of Angus Barn echoes that sentiment, adding: “We try to hire a staff that is equivalent to staffs in cities, where [restaurant service] is their profession. Everything comes back to how you treat the customers.”
