New in the Kitchen? Listen Up!
Recently I’ve come across individuals who are green to the restaurant business and already thinking about leaving their current first jobs. Why?
They’re not used to management, everyone else has left after three months and/or they think could do better elsewhere.
Joining a new kitchen is no easy task. You have to learn the flow and keep moving. The kitchen is really no more than a dance, and you have to learn the steps in order to survive.
The first dance is called “keep your head down.” Fresh out of culinary school, you think you know it all, come out with both guns blazing and bam, bam, bam, bam! You’re dead!
The cooks all hate you – especially the dishwashers who have been soaking it up for years – and the chef has humiliated you. This is a turning point in your career. Do you call it quits, or do you change your attitude and keep working?
Calling it quits will get you nowhere. You end up running from job to job with the same cockiness, blaming your former employers for your troubles. Losing the “I’m hot shit attitude” when you have never worked a station in your life is the way to go. Keeping your head down and taking the time to learn everything you can is what will make you a great chef.
Building skills and learning why others manage the way they do is something you can take with you to the next place. Anywhere you go, there is always a hazing period, but if you work hard and put in your time, it will be recognized.
We all want to be successful in this business. Sticking it out and building a solid foundation where you can grow in any direction is the key to success.
So the next time your staff has a thought about leaving after three months, just tell them you’ll break their legs if they try! It’s for their own good.
