As Thanksgiving approaches, no operator should ignore diners’ affection for roast turkey. For a bit of inspiration, we’ve compiled five simple and creative turkey ideas, from a whole bird roasted with Puerto Rican flair to a casual wild rice-and-turkey salad. Roasted Turkey, Puerto-Rican Style
It’s fitting that a chef in Florida looks to south to Puerto Rico for ideas. This recipe, from Chef-instructor Patricia Wilson of Johnston & Wales’ North Miami, Fla., campus, instructs cooks to infuse turkey with garlic, cumin and achiote seeds.
