Allison Perlik is Restaurants & Institutions' Senior Editor covering food trends. Prior to joining the R&I staff in December 2000, Perlik served as senior editor on Security Distributing & Marketing (owned by R&I parent Reed Business Information). She also has worked for the Peoria Journal Star and Chicago Daily Herald newspapers. Perlik earned a degree in English and journalism from Bradley University in Peoria. She serves on the board of the International Foodservice Editorial Council.
